What you'll do
1. Foundations of Dough
An introduction to the core principles of dough making: flour types, protein content, hydration, yeast, salt, and fermentation. We explore how each element affects texture, flavour, and structure, and how different styles of dough are used for focaccia, contemporary Neapolitan pizza, and pizza al padellino.
2. Mixing & Fermentation
Hands-on preparation of the dough, including mixing, autolysis, and developing gluten structure. We move through bulk fermentation techniques and discuss temperature control, timing, and how to read the dough as it evolves. Pre-fermented dough is also prepared in advance so guests can immediately work on shaping and baking.
3. Seasonal Toppings & Preparation
While the dough rests, we focus on building flavour through house-made toppings and sauces. Seasonal ingredients are used wherever possible, combining Irish produce with Italian staples. Guests prepare and assemble elements such as sauces, vegetables, cheeses, and cured meats, understanding balance and composition.
4. Shaping, Proofing & Baking
We move into shaping and final proofing, working across different styles depending on the group (focaccia, round contemporary pizza, or pizza al padellino). The experience finishes with baking and serving straight from the oven, followed by a shared tasting of all pizzas and focaccia prepared during the session.
